Vegetarian curry with lentils

With plenty of vegetables and lentils, this gluten free vegetarian curry is the perfect healthy and cleansing meal.

Ingredients

  • 300 ml green lentils
  • 5 – 6 small potatoes
  • 1 parsnip
  • 2 carrots
  • 1 sweet potato
  • 1 broccoli head
  • ½ cauliflower
  • 1 apple
  • 1 onion
  • 1 small leek
  • 3 cloves of garlic
  • 1 red chilli
  • 500 ml chopped tomatoes
  • 2 tbsp tandoori paste
  • Vegetable stock
  • 100 g butter
  • ½ tsp turmeric
  • Fresh coriander
  • Salt
  • Pepper

Directions

  1. Boil lentils in a pot with turmeric and vegetable stock for about 30 minutes.
  2. Dice potatoes, parsnip, carrots, and sweet potato. Boil in a pot for 10 – 15 minutes or until soft.
  3. Brown the leek, onion, and garlic in a frying pan.
  4. Pour in chopped tomatoes.
  5. Slice chilli, apple, cauliflower, and broccoli and add to the frying pan.
  6. Add root vegetables when they are soft.
  7. Add tandoori paste. NB: stir carefully – the vegetables shouldn’t become mashed.
  8. Pour in lentils.
  9. Add water and vegetable stock if necessary.
  10. Add butter and mix carefully.
  11. Add salt and pepper to taste.
  12. Garnish with a little freshly chopped coriander.
